Touch of Mexico Pizza
To help families have as much time together at the table as possible during National Eat Dinner Together Week, The National Pork Producers Council and 5-A-Day offer the following family favorites that use your pantry basics in recipes that take less than a half hour to make. With a quick trip to the grocery store and this day-by-day menu, you can enjoy these terrific meals in just minutes a day.
Ingredients:
1/2 Pound Ground Pork
1/2 Pound Taco Seasoning (2 Tablespoons)
1 Package Pizza Crust Mix (6-12 ounces)
1 Cup Salsa
1 Cup (4 ounces) Reduced Fat Shredded Colby Jack Cheese
2/3 Cup Coarsely Crushed Low-Fat Tortilla Chips
1 1/2 Cups Shredded Lettuce
2 Tablespoon Sliced Ripe Olives, optional
Cook ground pork with taco seasoning in large skillet over medium heat for approximately 10 minutes or until no longer pink. Prepare pizza crust according to package directions. Spread crust evenly on greased 12-inch pizza pan and top evenly with salsa. Sprinkle on taco meast, cheese, and tortilla chips.
Bake in 400 degrees F. oven for 18-22 minutes or until crust is golden brown. Remove from oven, top with shredded lettuce and olives and serve. Yield: 1 12-inch pizza. May substitute homemade 12-inch pizza crust.
