WOODSIDE'S SWEET ONION MARMALADE

8 large OSO SWEET Onions (sliced)
1 cup Balsamic Vinegar
2 cups Sugar
Zest and juice of 2 oranges
1 tablespoon Fresh Chopped Thyme
Red Wine
Salt and Pepper to taste
In a large heavy pan add all the ingredients, add red wine to just below the onion level. Bring all ingredients to boil and simmer until the onions are soft and in a marmalade like consistency. Adjust seasoning to taste.
Woodside serves this sweet onion marmalade is served with peppered filet of beef, scalloped potatoes and red wine reduction.
