MEXICAN POTATO SALAD

Makes store bought potato salad more exciting with a touch of Mexico and renewed freshness.

Ingredients:

5 lbs. Mustard or plain Potato Salad

½ Cup diced sweet Red Bell Pepper

½ Cup Diced Green Peppers

¼ Cup Diced Jalapeno or Serrano Peppers

½ Cup Diced Sweet Onion (OSO Sweet or Vidalia)

½ Cup Diced Celery

½ Cup Fresh Minced Cilantro

In a large mixing bowl simply mix all ingredients together and serve. Especially good when placed in a zip lock bag or storage container and refrigerated over night for flavors to meld.
