Hacienda Salad
This delicious salad is a “typical” Chilean Salad that is easy to make yet distinctive in flavor. This particular salad was served to us at the oldest Hacienda in South America – under the ownership of the Maria Helena family for 18 generations spanning 446 years. For 18 generations this Salad has been a staple offering at the Hacienda Los Lingues.
2 Cups Fresh Ripe Tomatoes (cut into small wedges or large chunks Peeling the tomatoes is optional
1 Large sweet Onion (cut into thin. Slices and halved)
1 Bunch Fresh Cilantro (also known as corilander) Diced and chopped fine, (Substitute 2 tsp dry if fresh not available)
½ Cup Olive Oil
Salt & Pepper To Taste
In a large Salad Bowl, add tomatoes, sweet onion, cilantro, and olive oil and toss till well blended. Salt, pepper to taste. Serve on a Salad platter garnished with sprig of Cilantro or serve in individual bowls. Superbly aromatic and simply delicious! Serves 4- 6
