Cucumber and Tomato Topping

Enjoy this deliciously light, low calorie, heart healthy topping for any type of hot pasta. Here’s how:

Ingredients:

2 Medium Cucumbers, Peeled, Seeded and Chopped

1 Medium Ripe Tomato (Chopped)

1 Tblsp. White Wine Vinegar

1 Clove Garlic (Minced)

1 Tblsp. Fresh Parsley (Chopped)

2 Tblsp. Fresh Basil (Chopped) or ½ Teaspoon Dried Basil

2 Tblsp. Olive Oil

8 Oz. Your favorite Pasta, Cooked and Drained

In a mixing bowl, combine cucumbers, tomatoes, vinegar, parsley, basil and oil. Toss gently till all ingredients are evenly blended. Adding salt and pepper to taste is optional. Ladle over hot pasta or toss with hot pasta and serve immediately. Serves 4
