CRISTAL GLAZED ONIONS
1—1/2 LBS. Onions
1/2 cup Boiling Water
1/2 cup Chicken or Veal Stock
2 Tablespoons Butter
1 Tablespoon Brown Sugar
Remove top layer from onions, slice onions. Place in saucepan with 1/2 cup boiling water and stock. Add 1 tablespoon butter and sugar. Bring to a boil. Reduce heat and simmer 15 minutes or until liquid is evaporated. Add remaining butter, shake pan and stir over heat until onions are glazed.
