Collard Green Frittata

Aunt Kizzy's Back Porch Catering Division

1/3 cup Olive Oil or Pam

2 medium OSO SWEET ONIONS, chopped and lightly sautéed

2 Diced Potatoes, lightly sautéed

8 Mushrooms sliced

2 cups Cooked and Drained well Collard Greens

1 cup Shredded Cheese '

12 Eggs beaten and seasoned with salt and pepper and optional dash of Tabasco

1/2 cup Diced Ham, optional

Coat baking dish with olive oil or pam. Arrange vegetables, meat and cheese in decorative pattern on the bottom of the pan evenly. Pour seasoned eggs over the top. Bake 15—20 minutes or until set at 350 degrees. Cut and serve into squares for appetizers.
